Cheesy Garlic Bread Sandwich

I absolutely love garlic bread with loads of cheese but what if this was turned into a sandwich? This was my first try and wow did it exceed my expectations! You have the fresh crispy pizza dough bread with that wonderful cheesy garlic topping then adding the sweetness of caramelized onions, then adding the peppery tang of the fresh rocket, then the added crunch of the crispy bacon then finished with thick balsamic glaze… yes yes yes Would I change anything… no, but I may add some sundried tomatoes and maybe a chopped fresh chilli? An idea of version 2 maybe? In any case this was an absolute success and one I highly recommend trying. If you don’t have a pizza oven, a normal conventional oven is perfectly fine but would suggest getting a pizza stone for your oven as this will help give you a crispy base.

Ingredients:
Pizza dough:
This makes 4 medium size base bases (4 sandwiches) – I only cooked up 2 and wrapped up the other two for the freezer (Quick pizza bases 😊)
320ml warm water (between 38-43°C)
Approx 450g All-purpose flour (plus more for hands and surface)
7g Dried yeast (1 standard packet)
1 Tbsp (13g) granulated sugar
2 Tbsp (30ml) olive oil, plus more for pan and brushing on dough
1 Tsp salt
Sprinkle of cornmeal for dusting the pan or just flour if your don’t have this like me!
The below is the ingredients to make two sandwiches therefore split the below 50/50 to make both sandwiches.
Approx 25g of garlic butter (refer to my website other recipes for this)
175g of grated Mozzeralla and cheddar mixed cheese
2 Tsp Dried oregano
80g fresh rocket
1 White onion
2 Tbsp of brown sugar
Cold crispy bacon smoked bacon (3 rashers) or fresh – I just had some left over from breakfast!
1 Tbsp Balsamic dressing plus more to add over the top to finish (as per the video)
