Lotus Biscoff apple crumble

Lotus biscuits are in my opinion just the perfect little biscuit (In the world of none chocolate biscuits that is!). You will have seen there have been many different ways of getting these wonderful biscuits into your favourite dish mainly through the use of Biscoff spread which is just amazing probably better than chocolate spread??? Now, my other love is apple crumble and what if we married these two together? The wonderful cinnamon infused crumble with cinnamon infused biscuits… 😊 The result was probably now my favourite desert! – Winter comfort food at its finest!!
The below will feed 4 desert craving adults.
Ingredients
The apple filling
1. 650 g Bramley Apples peeled and chopped (If you cant get Bramley apples then id suggest Granny smith)
2. 110 g Biscoff spread
3. 2 tsp Lemon juice
4. 60 g Light brown soft sugar
5. 1 tsp Cinnamon
6. 1 ½ tbsp water
7. 1 tsp Cornflour (also known as cornstarch)
8. 2 Tsp butter
The crumble mix
1. 175 g Plain flour
2. 100 g Light brown sugar
3. 1 Tsp cinnamon
4. 115 g Butter
5. 70 g Biscoff biscuits crushed
Method:
Fire up your pizza oven or conventional oven to 180C Fan/350F/Gas Mark 4
Peel and chop the apples, add them to the bowl with a dash of lemon juice to stop them from browning.
Add sugar, cornflour, cinnamon, butter and 1 ½ Tbsp of water stir together and gently cook for a few minutes until the apples have softened. Taste and add a little more sugar if needed, depending on how tart the apples are. Transfer to a greased ovenproof dish – and leave to cool a little
In a mixing bowl, stir the plain flour and light brown sugar together
Add the butter to the bowl in chunks or cubes, then using your fingers, rub it into the flour and sugar until it resembles breadcrumbs. You can also do this in a food processor if you prefer
Add the cinamon then stir in the crushed Biscoff biscuits - Crumble mix done!
Add spoonful’s of the Biscoff spread dotted evenly over the apples
Pour the crumble mix on top, spread out into an even layer
Bake for 40 minutes, or until golden and bubbling
Serve immediately with a token lotus biscuit for your Instagram shot of course. Perfectly paired with custard, cream or ice cream
Once the apple crumble is fully cooled down, you can store in the fridge for up to 3 days, or freezer in
portions.
