Panko fillet steak with sticky soy glaze and blue cheese sauce

I love steak, however what cut of steak... that's the question. As my experience has grown I moved from fillet to a more fatty cut that when cooked with more experience I personally feel offers the best flavor. At the moment my preference is the Tomahawk as cooked on the bone just gives more flavor. BUT... fillet has always been desired from the way it melts in your mouth but with no fat it also has less natural flavor in my opinion. So, this is where the idea came from. Why not wrap it in panko to give a crispy texture then apply some big flavors. Did it work? OMG did it!
This will feed two hungry people
Ingredients:

Steak:
500g Fillet steak
100g of panko bread crumbs
2 Eggs whisked
2 Tbsp salt & pepper (course grounded)
Deep fried in 4Lts of Rapeseed
Blue cheese sauce:
100g of Blue cheese (I used stilton) chopped to crumb texture
125ml of cream
2 Tsp of Worcestershire sauce
Sweet soy glaze:
1 Tbsp of mushroom ketchup
2 Tbsp of apple Juice
1 Tbsp of soy sauce
1 Tbsp of marmite
2 Tbsp of honey
Directions:
First fire up your BBQ or pizza oven.
Get your steak out of the fridge to come up to room temperature
Blue cheese sauce:
Chop up your cheese to a crumb like texture.
In a saucepan add your cream and slowly heat up to a simmer then add your cheese once melted add your Worstershire sauce. At this stage you choose, some prefer lumpy some smooth. For this recipe ive blitzed it with a hand blender to get a smooth texture. Remove from heat pour into a bowl to cool.
Steak:
Cover the steak in your salt and pepper mix then place in the bbq/pizza oven. I started with a sear in the hot part of the pizza oven just to seal it then moved to the front of the oven added a thermometer and slowly brought it up to the desired temperature (turning frequently to stop it catching on one side) - This is more needed if cooking in a stone pizza oven due to higher heat. I went for Medium rare therefore
55c-57c. Then removed and left to rest.
Sweet soy glaze
Add all the ingredients to a bowl, mix then add to a pan and heat up to a boil to reduce down slightly just enough so it thickens so that when you rub a wooden spoon across the pan you can see a line through the sauce. Remove from heat pour into a bowl to cool.
Frying:
Heat up your oil to 180c
Place your whisked eggs in one bowl and panko in another.
Drop your rested steak into the eggs, then place in the panko. Repeat this for a second time then carefully place into your oil and fry until golden brown. Due to size you may need to turn for an even cook. (This should only take 3 or so minutes)
Remove your wonderful crisp steak, cut up, admire the perfectly red center, apply your sticky soy glaze, then drizzle the blue cheese sauce over the top - Enjoy!
